Ingredients

The dough

  • ½ cup all-purpose flour
  • cup unsweetened cocoa powder
  • ½ teaspoon salt
  • ¼ teaspoon baking powder
  • 6 ounces bittersweet chocolate, coarsely chopped
  • 4 tablespoons unsalted butter
  • 2 large eggs
  • cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • 12 ounces semi-sweet chocolate chips

Topping

  • to taste flaky sea salt

Instructions

  1. Preheat the oven to 350°F and line two baking sheets with parchment paper.
  2. Sift together the flour, cocoa powder, salt, and baking powder in a small bowl.
  3. Melt the bittersweet chocolate and butter in a heatproof bowl over simmering water until smooth, then let cool.
  4. In a mixing bowl, beat the eggs and sugar until pale and foamy, then add the vanilla.
  5. Mix in the cooled chocolate mixture until incorporated.
  6. Gradually add the dry ingredients until just combined.
  7. Stir in the chocolate chips gently.
  8. Drop rounded tablespoonfuls of dough onto the prepared baking sheets, spacing them apart.
  9. Sprinkle with flaky sea salt and bake for 9 to 10 minutes.
  10. Let the cookies cool on the baking sheet for 2 minutes before transferring to a cooling rack.
