Ingredients

The dough

  • cups all-purpose flour
  • 1 cup whole-wheat flour
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • 1 cup salted butter, cold, cut into ½-inch cubes
  • 1 cup light brown sugar, packed
  • ½ cup granulated sugar
  • 2 large eggs, lightly beaten
  • 2 teaspoons vanilla extract
  • 2 cups semisweet chocolate chips

Topping

  • to taste flaky sea salt

Instructions

  1. Preheat the oven to 375°F (190°C) and line two baking sheets with parchment paper.
  2. In a bowl, mix together the all-purpose flour, whole-wheat flour, baking powder, and baking soda.
  3. In a stand mixer, cream the cold butter, brown sugar, and granulated sugar until smooth.
  4. Add the eggs and vanilla to the mixture and beat for two minutes.
  5. Gradually mix in the flour mixture until combined, then gently fold in the chocolate chips.
  6. Divide the dough into 12 balls and place them on the baking sheets, leaving space between each.
  7. Sprinkle each dough ball with flaky sea salt and chill in the refrigerator overnight or freeze for 15-20 minutes.
  8. Bake the cookies for 20-22 minutes until the edges are golden brown.
  9. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack.
