Ingredients

The cupcakes

  • 1 bottle (12-ounce) Guinness beer
  • 1 cup all-purpose flour
  • ½ cup unsweetened natural cocoa powder
  • teaspoons espresso powder
  • ¾ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup + 1 tablespoon vegetable or canola oil
  • 1 cup packed light or dark brown sugar
  • 2 large eggs
  • ¾ cup full-fat sour cream
  • 2 teaspoons pure vanilla extract

Mocha Guinness Buttercream

  • 2 tablespoons reduced Guinness
  • 2 teaspoons espresso powder
  • cups unsalted butter
  • cups confectioners’ sugar
  • 1 tablespoon unsweetened natural cocoa powder
  • 1 tablespoon milk
  • 1 teaspoon pure vanilla extract
  • 1 pinch salt

Instructions

  1. Simmer Guinness in a saucepan until reduced to 2/3 cup, then cool.
  2. Preheat the oven to 350°F (177°C) and prepare muffin pans with liners.
  3. Mix dry ingredients in one bowl and wet ingredients in another, then combine.
  4. Fill cupcake liners 2/3 full with batter and bake for 19-22 minutes.
  5. Cool cupcakes completely before frosting.
  6. Prepare the buttercream by mixing the ingredients until smooth and creamy.
  7. Frost the cooled cupcakes as desired.
