Instructions
- Preheat the oven to 350°F and prepare three 8-inch round cake pans.
- In a saucepan, bring Guinness and butter to a simmer, then add cocoa powder and whisk until smooth.
- Cool the mixture in the freezer for 10 minutes.
- In a large bowl, whisk together flour, sugar, baking soda, and salt.
- In a stand mixer, beat eggs and sour cream, then add the cooled Guinness mixture and combine.
- Gradually add the flour mixture and fold until combined.
- Divide the batter among the prepared pans and bake for 35-40 minutes.
- Cool the cakes for 10 minutes in the pans, then transfer to a rack to cool completely.
- For the frosting, beat cream cheese and butter until smooth, then add vanilla and salt.
- Gradually mix in powdered sugar until well combined, adjusting thickness if necessary.
- Frost the cooled cakes and store in a sealed container.
