Ingredients

The cake

  • 2 cups Guinness (or other stout)
  • 2 cups unsalted butter
  • 1 ½ cups dark chocolate unsweetened cocoa powder
  • 4 cups all-purpose flour
  • 4 cups sugar
  • 1 Tbsp. baking soda
  • 2 tsp. salt
  • 4 large eggs
  • 1 ⅓ cups sour cream

The frosting

  • 3 (8 oz.) bricks cream cheese
  • 1 cup unsalted butter
  • 1 Tbsp. vanilla extract
  • ½ tsp. salt
  • 6 cups powdered sugar

Instructions

  1. Preheat the oven to 350°F and prepare three 8-inch round cake pans.
  2. In a saucepan, bring Guinness and butter to a simmer, then add cocoa powder and whisk until smooth.
  3. Cool the mixture in the freezer for 10 minutes.
  4. In a large bowl, whisk together flour, sugar, baking soda, and salt.
  5. In a stand mixer, beat eggs and sour cream, then add the cooled Guinness mixture and combine.
  6. Gradually add the flour mixture and fold until combined.
  7. Divide the batter among the prepared pans and bake for 35-40 minutes.
  8. Cool the cakes for 10 minutes in the pans, then transfer to a rack to cool completely.
  9. For the frosting, beat cream cheese and butter until smooth, then add vanilla and salt.
  10. Gradually mix in powdered sugar until well combined, adjusting thickness if necessary.
  11. Frost the cooled cakes and store in a sealed container.
