Ingredients

The cake

  • 2 cups sugar
  • cups all-purpose flour
  • ¾ cup cocoa powder
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 large eggs
  • ½ cup buttermilk or sour milk
  • ¼ cup sour cream
  • 1 cup Guinness
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • ½ cup hot coffee

Chocolate Ganache

  • 3-4 tablespoons heavy cream or whip cream
  • 1 tablespoon butter
  • 1 cup semi-sweet and milk chocolate

Baileys Irish Cream Cheese Frosting

  • 4 ounces unsalted butter, softened
  • 8 ounces cream cheese, softened
  • 4-6 cups powdered sugar
  • 4-6 tablespoons Baileys Irish cream

Instructions

  1. Preheat the oven to 325°F and grease and flour a 10-inch tube pan.
  2. In a large bowl, mix together the sugar, flour, cocoa powder, baking soda, baking powder, and salt.
  3. Add the eggs, buttermilk, sour cream, Guinness, vegetable oil, and vanilla to the dry ingredients.
  4. Pour in the hot coffee and mix with a spatula or wooden spoon for about 1-2 minutes until the batter is thin.
  5. Pour the batter into the prepared pan and bake for 45 minutes or until a toothpick inserted in the center comes out clean.
  6. Remove the cake from the pan and cool completely on a cooling rack.
  7. For the chocolate ganache, melt the cream, butter, and chocolate in the microwave for about a minute and mix until smooth.
  8. Pour the ganache over the cooled cake and serve.
  9. For the frosting, mix the softened butter and cream cheese together, then add the powdered sugar a cup at a time until smooth.
  10. Slowly pour in the Baileys, adjusting to taste, and refrigerate until ready to use.
  11. Spread the frosting over the cake before serving.
