Chocolate Stout Cupcakes with Baileys Frosting

Ingredients

The frosting

  • 5.5 oz 1/3 less fat Philly Cream Cheese, softened
  • ½ cup powdered sugar
  • 4 tsp Bailey's Irish Cream

The cupcakes

  • ¾ cup sugar
  • 1 cup flour
  • 7 tbsp unsweetened cocoa powder
  • ½ tsp salt
  • 1 tsp baking soda
  • 1 large egg
  • ½ cup stout
  • 4 oz unsweetened apple sauce
  • ¼ cup unsweetened vanilla almond milk
  • ¼ cup reduced fat sour cream
  • 1 tsp vanilla
  • 1 ½ tbsp canola oil
  • to taste spray cooking spray

Instructions

  1. Mix all frosting ingredients in a medium bowl until smooth and refrigerate.
  2. Preheat the oven to 350°F and line a cupcake tin with 12 liners, lightly spraying them with cooking spray.
  3. Sift together the dry ingredients in a large bowl.
  4. In a medium bowl, combine the wet ingredients and beat until smooth.
  5. Slowly add the dry mixture to the wet ingredients and mix until just combined.
  6. Pour the batter into the cupcake liners and bake for 30 minutes or until a toothpick comes out clean.
  7. Allow the cupcakes to cool completely before frosting.
