Honey Lemongrass Baked Chicken

Instructions
- Cut the lemongrass into small rings and pound them lightly to release their aroma.
- Rinse the chicken and pat it dry, then rub in the lemongrass and garlic.
- Mix all marinade ingredients with the chicken, ensuring it's evenly coated. Marinate for at least 30 minutes.
- Preheat the oven to 375°F (190°C) and line a baking tray with a baking sheet.
- Arrange the chicken on the tray and bake for 30-40 minutes until golden brown and cooked through.
- Serve immediately, reserving any juices that seep out.
