Instructions
- Grind the cashews, almonds, cinnamon, and salt in a food processor until finely ground.
- Add the pitted dates and vanilla to the processor and blend until the mixture is sticky.
- Scoop the dough with a tablespoon and roll it into balls.
- Place the balls on a parchment-lined plate or baking sheet and refrigerate or freeze for one hour.
- Store the firmed balls in an airtight container in the fridge for up to two weeks.
