Ingredients

The pasta

  • 1 pound dry pasta

The sauce

  • 1 25 oz. jar marinara sauce
  • ¼ cup prepared hummus

The vegetables

  • 1 pound assorted vegetables

Other

  • as needed none olive oil
  • to taste none salt

Instructions

  1. 1. Boil salted water in a large pot and preheat the oven to 400°F.
  2. 2. Chop the vegetables and spread them on a baking sheet, drizzling with olive oil and salt.
  3. 3. Roast the vegetables for about 15 minutes until tender.
  4. 4. Cook the pasta in the boiling water according to package instructions, then drain.
  5. 5. In the same pot used for the pasta, combine the marinara sauce and hummus over medium heat to create a creamy sauce.
  6. 6. Add the cooked vegetables and pasta to the sauce, tossing to coat well.
  7. 7. Season with additional salt if needed and serve warm.
