Instructions
- 1. Boil salted water in a large pot and preheat the oven to 400°F.
- 2. Chop the vegetables and spread them on a baking sheet, drizzling with olive oil and salt.
- 3. Roast the vegetables for about 15 minutes until tender.
- 4. Cook the pasta in the boiling water according to package instructions, then drain.
- 5. In the same pot used for the pasta, combine the marinara sauce and hummus over medium heat to create a creamy sauce.
- 6. Add the cooked vegetables and pasta to the sauce, tossing to coat well.
- 7. Season with additional salt if needed and serve warm.
