Hummus Pasta

Ingredients

The pasta

  • 8 ounces dry pasta
  • ¼ cup pasta water

The sauce

  • 1 cup garlicky well-seasoned hummus
  • 2 teaspoons olive oil
  • ½ cup spinach, chopped
  • 3 pieces sundried tomatoes, thinly sliced
  • to taste salt
  • to taste pepper
  • 1 squeeze lime

Instructions

  1. Boil the pasta according to package directions and reserve some pasta water before draining.
  2. Sauté the sundried tomatoes and spinach in olive oil until the spinach is wilted.
  3. Add hummus and reserved pasta water to the sautéed vegetables and stir until smooth.
  4. Combine the cooked pasta with the hummus sauce and stir to mix.
  5. Season with salt and pepper to taste, and finish with a squeeze of lime before serving.
