The Pasta
Instructions
- Drain the chickpeas and blend them with olive oil, lemon juice, tahini, garlic, cumin, and salt until smooth.
- Add chopped scallions and parsley to the hummus and blend until small flecks of green remain.
- Cook the pasta according to package directions and reserve 1 cup of the cooking water before draining.
- Return the drained pasta to the pot off the heat, add the hummus, and stir to coat the pasta, adding reserved water as needed to keep it saucy.
- Serve immediately.
