Ingredients

The Hummus

  • 1 15oz. can chickpeas
  • ¼ cup olive oil
  • 1 fresh lemon, or ¼ cup juice lemon
  • ¼ cup tahini
  • 1 clove garlic
  • ¼ tsp ground cumin
  • ½ tsp salt
  • 2 scallions scallions (green onions)
  • ¼ bunch fresh parsley

The Pasta

  • 8 oz. pasta

Instructions

  1. Drain the chickpeas and blend them with olive oil, lemon juice, tahini, garlic, cumin, and salt until smooth.
  2. Add chopped scallions and parsley to the hummus and blend until small flecks of green remain.
  3. Cook the pasta according to package directions and reserve 1 cup of the cooking water before draining.
  4. Return the drained pasta to the pot off the heat, add the hummus, and stir to coat the pasta, adding reserved water as needed to keep it saucy.
  5. Serve immediately.
