Lemon Hummus Pasta

Ingredients

The pasta

  • 8 ounces uncooked whole wheat spaghetti or pasta of choice
  • ¾ cup reserved pasta water

The sauce

  • 2 teaspoons olive oil
  • 4 cups fresh spinach or arugula
  • 1 pint cherry or grape tomatoes, sliced in half lengthwise
  • ¼ teaspoon salt
  • 1 tablespoon za'atar seasoning (optional)
  • ¾ cup garlic hummus
  • ¼ cup lemon juice
  • 1 teaspoon lemon zest
  • to taste freshly ground black pepper

Instructions

  1. Cook the pasta according to package instructions, reserving at least ¾ cup of pasta water before draining.
  2. In a medium pot or skillet, heat olive oil over medium heat.
  3. Add spinach, tomatoes, and salt, cooking until spinach is wilted and tomatoes are broken down, about 3-4 minutes.
  4. If using, stir in za'atar seasoning and toast for 30 seconds.
  5. Stir in hummus, lemon juice, ¼ cup reserved pasta water, lemon zest, and black pepper.
  6. Toss the cooked pasta in the sauce, adding more pasta water as needed to thin the sauce.
  7. Serve and enjoy!
