Hummus

chickpeas, drained and rinsed

lemon juice, freshly squeezed

Instructions
- Puree the lemon juice and garlic in a food processor, then let it sit for 5-10 minutes.
- Simmer the chickpeas in boiling water for 15-20 minutes until very soft.
- Drain the chickpeas and optionally remove the skins.
- Add the chickpeas, tahini, olive oil, salt, cumin, and water to the food processor along with the lemon juice mixture.
- Puree until smooth, adding more water if needed to reach the desired consistency.
- Taste and adjust salt if necessary.
- Transfer the hummus to a bowl, drizzle with olive oil, and garnish with paprika and parsley if desired.
