Ingredients

The base ingredients

  • 1 15 ounce can chickpeas, drained and rinsed
  • 3 tablespoons lemon juice, freshly squeezed
  • 1 teaspoon garlic, roughly chopped
  • ½ cup tahini
  • 4 tablespoons olive oil, plus more for garnish
  • 1 teaspoon kosher salt
  • ¾ teaspoon ground cumin
  • 2 tablespoons water, or more if needed

Optional garnishes

  • to taste fresh chopped parsley
  • to taste smoked paprika

Instructions

  1. Puree the lemon juice and garlic in a food processor, then let it sit for 5-10 minutes.
  2. Simmer the chickpeas in boiling water for 15-20 minutes until very soft.
  3. Drain the chickpeas and optionally remove the skins.
  4. Add the chickpeas, tahini, olive oil, salt, cumin, and water to the food processor along with the lemon juice mixture.
  5. Puree until smooth, adding more water if needed to reach the desired consistency.
  6. Taste and adjust salt if necessary.
  7. Transfer the hummus to a bowl, drizzle with olive oil, and garnish with paprika and parsley if desired.
