Ingredients

Roasted Garlic

  • 1 head garlic
  • 1 sprig thyme
  • to taste salt
  • to taste pepper
  • just a drizzle ml olive oil

Hummus

  • 2 (15.5 oz) cans chickpeas
  • ⅓ - ½ cup tahini sauce
  • cup olive oil
  • 1 piece lemon (for juice)
  • ½ - 1 teaspoon ground cumin
  • to taste salt
  • to taste pepper
  • to garnish pepper flakes
  • to garnish paprika
  • to garnish ml olive oil

Instructions

  1. Prepare the garlic by cutting the top off a whole head to expose the cloves.
  2. Wrap the garlic with thyme in foil, drizzle with olive oil, and roast for about 30 minutes until golden.
  3. Let the garlic cool and squeeze the cloves out of their skins.
  4. In a food processor, combine the roasted garlic, chickpeas, tahini, olive oil, lemon juice, and cumin, and blend until smooth.
  5. Adjust seasoning with more tahini, olive oil, lemon, or cumin as desired.
  6. Transfer the hummus to a bowl and garnish with pepper flakes, paprika, and a drizzle of olive oil.
