Instructions
- Prepare the garlic by cutting the top off a whole head to expose the cloves.
- Wrap the garlic with thyme in foil, drizzle with olive oil, and roast for about 30 minutes until golden.
- Let the garlic cool and squeeze the cloves out of their skins.
- In a food processor, combine the roasted garlic, chickpeas, tahini, olive oil, lemon juice, and cumin, and blend until smooth.
- Adjust seasoning with more tahini, olive oil, lemon, or cumin as desired.
- Transfer the hummus to a bowl and garnish with pepper flakes, paprika, and a drizzle of olive oil.
