Chocolate Peanut Butter Vegan Cookie Dough Bites

The dark chocolate magic shell coating

dark chocolate or vegan chocolate chips

refined coconut oil (liquid)

Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- Peel and cook the sweet potato, then mash it and set aside.
- Grind the gluten-free oats in a food processor until they resemble flour.
- Prepare a chia egg by soaking chia seeds in water for 20 minutes until gel-like.
- Mix all ingredients except the chia egg in a large bowl or blender until a thick batter forms, then add the chia egg and mix again.
- Roll the batter into golf ball-sized balls and place them on the baking sheet, pressing them down slightly.
- Bake for 18-20 minutes, then let cool.
- For the chocolate magic shell, melt chocolate with coconut oil and vanilla over simmering water until smooth.
- Dip or drizzle the cooled cookie dough bites with the melted chocolate, then freeze for 30 minutes.
