Instructions
- Combine peanut butter, maple syrup, and vanilla in a bowl and mix until smooth.
- In another bowl, mix pea protein powder, oat flour, powdered peanut butter, coconut flour, and salt, then add to the peanut butter mixture.
- Mix until a stiff dough forms; adjust consistency with water or coconut flour as needed.
- Scoop dough into balls about 1 inch in diameter, then flatten slightly.
- Place cookies on a lined baking sheet and imprint with a fork.
- Chill cookies in the fridge for about 10 minutes.
- Melt chocolate and coconut oil together until just warm.
- Dip half of each cookie in melted chocolate and let excess drip off.
- Sprinkle with chopped peanuts and refrigerate until chocolate sets, about 5 minutes.
- Store cookies in an airtight container in the fridge or freezer.
