Ingredients

The cookie dough

  • cups natural peanut butter
  • 1 cup pure maple syrup
  • 2 tsps vanilla extract
  • 2 cups rolled oats
  • 2 tsps baking powder
  • 1 tsp salt

The chocolate

  • ¾ cup chocolate chips (vegan)

Instructions

  1. Preheat the oven to 350 degrees.
  2. In a mixing bowl, combine the peanut butter, maple syrup, and vanilla extract.
  3. Grind 1 cup of oats into oat flour using a blender or food processor.
  4. Add the ground oats, 1 cup of rolled oats, baking powder, and salt to the wet ingredients and mix well.
  5. Stir in the chocolate chips with a wooden spoon.
  6. Refrigerate the dough for 15 to 30 minutes (optional).
  7. Use a cookie scoop or your hands to form balls of dough and place them on a baking sheet, pressing them slightly to flatten.
  8. Bake for 10 to 12 minutes until set and edges are just beginning to brown.
  9. Cool on the tray for 5 minutes, then transfer to a wire rack to cool completely.
