Vegan Peanut Butter Oatmeal Cookies

Instructions
- Preheat the oven to 350 degrees.
- In a mixing bowl, combine the peanut butter, maple syrup, and vanilla extract.
- Grind 1 cup of oats into oat flour using a blender or food processor.
- Add the ground oats, 1 cup of rolled oats, baking powder, and salt to the wet ingredients and mix well.
- Stir in the chocolate chips with a wooden spoon.
- Refrigerate the dough for 15 to 30 minutes (optional).
- Use a cookie scoop or your hands to form balls of dough and place them on a baking sheet, pressing them slightly to flatten.
- Bake for 10 to 12 minutes until set and edges are just beginning to brown.
- Cool on the tray for 5 minutes, then transfer to a wire rack to cool completely.
