Ingredients

Dry Ingredients

  • 2 cups oats
  • 1 ¼ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt

Wet Ingredients

  • 1 cup natural or regular peanut butter
  • 1 cup lightly packed brown sugar
  • ½ cup granulated sugar
  • ½ cup neutral-flavored oil
  • ½ cup unsweetened applesauce
  • 1 teaspoon vanilla extract

Add-ins

  • 1 ½ cups chocolate chips or peanut butter chips

Instructions

  1. Preheat the oven to 350°F and line baking sheets with parchment paper.
  2. Process the oats in a food processor until coarsely ground.
  3. Add flour, baking soda, and salt to the oats and pulse to combine.
  4. In a large bowl, mix together the peanut butter, brown sugar, granulated sugar, oil, applesauce, and vanilla extract.
  5. Add the dry ingredients and chocolate chips to the wet mixture and stir until combined.
  6. Scoop the dough into 2-3 tablespoon-sized portions and roll into balls.
  7. Place the dough balls on the prepared baking sheets a few inches apart.
  8. Bake for 10-12 minutes until the edges are set and lightly golden.
  9. Let the cookies rest for 1-2 minutes on the baking sheet before transferring to a cooling rack.
