Instructions
- Preheat the oven to 350°F and line baking sheets with parchment paper.
- Process the oats in a food processor until coarsely ground.
- Add flour, baking soda, and salt to the oats and pulse to combine.
- In a large bowl, mix together the peanut butter, brown sugar, granulated sugar, oil, applesauce, and vanilla extract.
- Add the dry ingredients and chocolate chips to the wet mixture and stir until combined.
- Scoop the dough into 2-3 tablespoon-sized portions and roll into balls.
- Place the dough balls on the prepared baking sheets a few inches apart.
- Bake for 10-12 minutes until the edges are set and lightly golden.
- Let the cookies rest for 1-2 minutes on the baking sheet before transferring to a cooling rack.
