Air Fryer Artichokes with Feta Yogurt Dip

The Feta Yogurt Dip

plain Greek yogurt

crumbled feta cheese

Instructions
- Preheat the air fryer to 350℉.
- Prepare the artichokes by removing the outer leaves and cutting off the bottom of the stem and the top third of each artichoke.
- Snip the pointy ends of the leaves and slice each artichoke in half.
- Remove the fuzzy choke from the center of each half and rub the cut sides with lemon to prevent browning.
- Drizzle olive oil on the cut sides and sprinkle with salt and pepper.
- Place the artichokes cut side down in the air fryer basket and cook for 12-15 minutes, flipping halfway.
- While the artichokes are cooking, prepare the dip by mixing Greek yogurt, feta, lemon juice and zest, olive oil, milk, garlic, dill, mint, salt, and pepper in a bowl.
- Taste and adjust the seasoning of the dip as needed and refrigerate until serving.
