Air Fryer Artichokes with Feta Yogurt Dip

Ingredients

The Artichokes

  • 2 large artichokes
  • 1 small lemon
  • 1 tablespoon extra-virgin olive oil
  • to taste fine salt
  • to taste black pepper

The Feta Yogurt Dip

  • cup plain Greek yogurt
  • ¼ cup crumbled feta cheese
  • 1 small lemon (zest and juice)
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon dairy or unsweetened non-dairy milk
  • 1 clove garlic
  • 1 tablespoon finely chopped fresh dill
  • 1 tablespoon finely chopped fresh mint
  • ¼ teaspoon fine salt
  • ¼ teaspoon ground black pepper

Instructions

  1. Preheat the air fryer to 350℉.
  2. Prepare the artichokes by removing the outer leaves and cutting off the bottom of the stem and the top third of each artichoke.
  3. Snip the pointy ends of the leaves and slice each artichoke in half.
  4. Remove the fuzzy choke from the center of each half and rub the cut sides with lemon to prevent browning.
  5. Drizzle olive oil on the cut sides and sprinkle with salt and pepper.
  6. Place the artichokes cut side down in the air fryer basket and cook for 12-15 minutes, flipping halfway.
  7. While the artichokes are cooking, prepare the dip by mixing Greek yogurt, feta, lemon juice and zest, olive oil, milk, garlic, dill, mint, salt, and pepper in a bowl.
  8. Taste and adjust the seasoning of the dip as needed and refrigerate until serving.
