Ingredients

The fritters

  • 14 ounces marinated artichoke hearts
  • 3 ounces crumbled goat cheese
  • 2-3 cloves garlic
  • ½ medium lemon zest
  • ¾ cup all-purpose flour
  • 2 large eggs
  • ½ teaspoon smoked paprika
  • ¼ teaspoon dried thyme
  • ¼ teaspoon coarse salt
  • ¼ teaspoon ground black pepper
  • ¼ teaspoon cayenne pepper
  • ¼ teaspoon baking powder
  • 3-4 tablespoons oil

The dip

  • ½ cup plain Greek yogurt
  • 1-2 tablespoons mayonnaise
  • ½ medium lemon zest
  • 2-3 cloves garlic
  • ½ teaspoon granulated sugar

Instructions

  1. Combine artichoke hearts, goat cheese, garlic, flour, eggs, smoked paprika, thyme, salt, black pepper, cayenne pepper, and baking powder in a bowl until mixed well.
  2. Heat oil in a pot or skillet over medium to medium-high heat.
  3. Drop spoonfuls of the fritter batter into the hot oil and fry for 2-3 minutes on each side until golden brown.
  4. Remove fritters and place them on a paper towel to drain excess oil.
  5. In a separate bowl, whisk together yogurt, mayo, lemon zest, garlic, and sugar for the dip.
  6. Serve the fritters with the yogurt dip.
