Cream of Celery Soup

Instructions
- Melt butter in a saucepan over medium-high heat and sauté onion and celery until softened.
- Stir in flour and cook until lightly browned, then whisk in 2 ½ cups of broth and bring to a simmer.
- Simmer until vegetables are tender, then transfer to a blender and puree until smooth.
- Return the pureed soup to the pan, add the remaining broth and cream, and bring to a simmer.
- Season with salt and white pepper to taste, and garnish with croutons if desired.
