Cream of Celery Soup

Ingredients

The soup

  • ¼ cup butter
  • ¾ cup onion, minced
  • 4 cups celery, chopped
  • cup all-purpose flour
  • 4 cups chicken broth
  • ½ cup heavy cream
  • to taste salt
  • to taste ground white pepper

For garnish

  • as needed croutons

Instructions

  1. Melt butter in a saucepan over medium-high heat and sauté onion and celery until softened.
  2. Stir in flour and cook until lightly browned, then whisk in 2 ½ cups of broth and bring to a simmer.
  3. Simmer until vegetables are tender, then transfer to a blender and puree until smooth.
  4. Return the pureed soup to the pan, add the remaining broth and cream, and bring to a simmer.
  5. Season with salt and white pepper to taste, and garnish with croutons if desired.
