Cream of Celery Soup

Instructions
- Heat olive oil in a pot over medium heat.
- Add flour to the pot and whisk together, cooking for 2-3 minutes until it bubbles and starts to brown.
- Gradually whisk in milk and vegetable broth.
- Continue cooking and whisking for 5-7 minutes until the mixture begins to thicken.
- Stir in chopped celery, Parmesan cheese, onion powder, smoked paprika, and sea salt.
- Let the soup simmer for 6-8 minutes, then remove from heat and let cool.
