Ingredients

The base

  • 3 tablespoons extra virgin olive oil or butter

Thickening agent

  • ¼ cup all-purpose flour or gluten-free flour

Liquid ingredients

  • 1 cup milk (dairy or non-dairy)
  • 1 cup vegetable broth

Vegetables

  • ¼ cup finely chopped celery

Flavorings

  • 2 tablespoons Parmesan cheese or vegan Parmesan
  • ½ teaspoon onion powder
  • ¼ teaspoon smoked paprika
  • 1 teaspoon sea salt
  • ¼ teaspoon fresh ground black pepper

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add flour to the pot and whisk together, cooking for 2-3 minutes until it bubbles and starts to brown.
  3. Gradually whisk in milk and vegetable broth.
  4. Continue cooking and whisking for 5-7 minutes until the mixture begins to thicken.
  5. Stir in chopped celery, Parmesan cheese, onion powder, smoked paprika, and sea salt.
  6. Let the soup simmer for 6-8 minutes, then remove from heat and let cool.
