Simple Celery Soup

Instructions
- Heat oil in a pot over medium-high heat and sauté the onion until golden.
- Add garlic and cook until fragrant.
- Stir in celery, potatoes, broth, water, bay leaf, salt, pepper, and cayenne. Bring to a boil, then simmer until potatoes are tender.
- Remove bay leaf and add fresh herbs, stirring gently.
- Blend the soup until smooth using an immersion blender or regular blender.
- Return to pot, stir in sour cream or alternatives, and gently heat without boiling.
- Prepare crispy celery leaves by frying in hot oil until crisp.
- Serve the soup garnished with crispy leaves, nigella seeds, and hemp seeds.
