Simple Celery Soup

Ingredients

The soup

  • 2 tablespoons olive oil or butter
  • 1 cup onion, diced
  • 4 cloves garlic, rough chopped
  • 6 cups celery, sliced thin
  • 2 cups potatoes, sliced into ½ inch thick rounds
  • 4 cups veggie or chicken broth
  • 1 cup water
  • 1 leaf bay leaf (optional)
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • ⅛ – ¼ teaspoon cayenne

The garnish

  • ¼ cup fresh dill
  • ½ cup fresh parsley
  • ½ cup probiotic sour cream or alternatives
  • as needed none crispy celery leaves, nigella seeds, hemp seeds (optional)

Instructions

  1. Heat oil in a pot over medium-high heat and sauté the onion until golden.
  2. Add garlic and cook until fragrant.
  3. Stir in celery, potatoes, broth, water, bay leaf, salt, pepper, and cayenne. Bring to a boil, then simmer until potatoes are tender.
  4. Remove bay leaf and add fresh herbs, stirring gently.
  5. Blend the soup until smooth using an immersion blender or regular blender.
  6. Return to pot, stir in sour cream or alternatives, and gently heat without boiling.
  7. Prepare crispy celery leaves by frying in hot oil until crisp.
  8. Serve the soup garnished with crispy leaves, nigella seeds, and hemp seeds.
