Homemade Cream of Celery Soup

Ingredients

  • 3 tablespoons butter
  • 1 medium onion, diced
  • 7 ribs celery, diced
  • 2 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 3 cups chicken broth or vegetable broth
  • ½ cup heavy cream
  • to taste salt
  • to taste pepper
  • for garnish chives, chopped

Instructions

  1. Melt butter in a dutch oven over medium-high heat.
  2. Add diced onion, celery, and minced garlic; cook until soft.
  3. Stir in flour and cook for an additional 2 minutes.
  4. Pour in the chicken or vegetable broth and stir; reduce heat and simmer for 10 minutes.
  5. Remove from heat and let cool slightly; blend until smooth using an immersion blender or standard blender.
  6. Return to heat, stir in heavy cream, and simmer for 5 minutes.
  7. Season with salt and pepper as needed, then serve garnished with chopped chives.
