Homemade Cream of Celery Soup

Instructions
- Melt butter in a dutch oven over medium-high heat.
- Add diced onion, celery, and minced garlic; cook until soft.
- Stir in flour and cook for an additional 2 minutes.
- Pour in the chicken or vegetable broth and stir; reduce heat and simmer for 10 minutes.
- Remove from heat and let cool slightly; blend until smooth using an immersion blender or standard blender.
- Return to heat, stir in heavy cream, and simmer for 5 minutes.
- Season with salt and pepper as needed, then serve garnished with chopped chives.
