Ingredients

  • 2 tsp avocado oil
  • lb lean ground beef
  • 1 large onion, diced
  • 1 15 oz can diced tomatoes
  • 3-4 medium potatoes, peeled and chopped
  • ½ bag baby carrots, chopped
  • 6 cups beef broth
  • 2 tsp garlic powder
  • 1 tsp dried oregano
  • 1 tsp salt
  • to taste pepper
  • ½ bag frozen corn

Instructions

  1. 1. Heat the Instant Pot by pressing the Sauté button and add avocado oil.
  2. 2. Once hot, add the ground beef and onion, sauté until the beef is no longer pink.
  3. 3. Add diced tomatoes, potatoes, carrots, garlic powder, oregano, salt, and pepper.
  4. 4. Pour in the beef broth and stir to combine.
  5. 5. Lock the lid and set to cook for 10 minutes under high pressure.
  6. 6. After cooking, manually release the pressure.
  7. 7. Stir in the frozen corn and serve.
