Ingredients

Balsamic Red Onions

  • 1 to 2 tablespoons olive oil
  • 2 medium or 1 extra-large red onion
  • a pinch red pepper flakes
  • a dash salt
  • ¼ cup balsamic vinegar

Brussels Sprouts

  • 8 ounces Brussels sprouts
  • 1 ½ to 2 teaspoons olive oil
  • to taste salt
  • to taste freshly ground black pepper

Pizza

  • 1 batch easy whole wheat pizza dough or store-bought whole wheat dough
  • 1 ½ to 2 cups grated low-moisture part-skim mozzarella cheese
  • ¼ cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 425°F and place a pizza stone in the oven if you have one.
  2. Slice the onions into thin rounds and prepare the Brussels sprouts by removing tough ends and breaking them into leaves.
  3. Drizzle the Brussels sprouts with olive oil, season with salt and pepper, and set aside.
  4. In a skillet, heat olive oil and cook the onions with red pepper flakes and salt until soft, then add balsamic vinegar and cook until absorbed.
  5. Prepare the pizza dough as directed, rolling it out as thin as possible.
  6. Top the dough with red onions, mozzarella cheese, Brussels sprouts, and Parmesan cheese.
  7. Bake the pizza for 10 to 14 minutes until the crust is golden and the cheese is bubbly.
  8. Slice and serve with additional pepper and red pepper flakes if desired.
