Roasted Brussels Sprout and Red Cabbage Pizza

Ingredients

The roasted Brussels sprouts

  • ½ pound Brussels sprouts, trimmed and halved lengthwise
  • 1 tablespoon olive oil
  • 1 tablespoon honey
  • 1 clove garlic, minced
  • ¼ teaspoon salt
  • pinch crushed red pepper flakes

The pizza

  • 1 pound refrigerated pizza dough
  • 1 tablespoon olive oil
  • 1 ¼ cups shredded mozzarella cheese, divided
  • ¾ cup shredded red cabbage
  • ¼ cup chopped toasted walnuts
  • 1 lemon zest for garnish

Instructions

  1. Preheat the oven to 400ºF.
  2. Toss Brussels sprouts with olive oil, honey, garlic, salt, and red pepper flakes on a baking sheet.
  3. Bake for 12 to 15 minutes until tender, stirring halfway through, then set aside to cool.
  4. Increase oven temperature to 500ºF and heat a pizza stone if using.
  5. Roll out the pizza dough on a floured surface and transfer to parchment dusted with cornmeal.
  6. Brush the dough with olive oil and top with 1 cup of mozzarella, followed by cabbage, walnuts, and roasted Brussels sprouts.
  7. Add the remaining ¼ cup of mozzarella on top.
  8. Bake for 10 to 13 minutes until the crust is golden brown.
  9. Sprinkle with lemon zest, cut into slices, and serve.
