Ingredients

  • 1 extra large (or 2 small) head of cauliflower, chopped into bite-size pieces
  • ¼ cup water
  • ½ block light cream cheese, softened
  • ½ cup ranch dressing
  • ½ cup buffalo sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • cups shredded cheddar cheese, divided

Instructions

  1. 1. In a dutch oven, steam the chopped cauliflower with water for 8-10 minutes.
  2. 2. Turn off the heat and drain the cauliflower.
  3. 3. Stir in the softened cream cheese, ranch dressing, buffalo sauce, garlic powder, and onion powder.
  4. 4. Mix in ½ cup of shredded cheddar cheese.
  5. 5. Pour the mixture into an 8x8 baking dish and top with 1 cup of shredded cheddar cheese.
  6. 6. Bake for 15 minutes at 400°F.
