Buffalo Cauliflower Dip

Ingredients

The dip

  • ΒΌ cup water
  • 1 pound riced cauliflower
  • 1 bottle (5-ounce) hot sauce
  • 2 packages (8-ounce) cream cheese
  • 2 cups shredded cheddar cheese
  • 1 cup blue cheese dressing or ranch dressing
  • to taste blue cheese crumbles for garnish

For serving

  • as needed carrots and celery, peeled and cut into 4-inch pieces
  • as needed crackers

Instructions

  1. In a medium saucepan, combine cauliflower rice and water, cover, and cook until tender, about 5 minutes.
  2. Stir in hot sauce, cream cheese, cheddar cheese, and ranch or blue cheese dressing, and continue stirring until hot and bubbly, about 5 minutes.
  3. Garnish with blue cheese crumbles and serve hot with carrots, celery sticks, or crackers.
