Healthy Buffalo Cauliflower Dip

Ingredients

  • 1 12oz bag frozen cauliflower florets
  • 1 cup raw cashews
  • 1 15oz can chickpeas
  • ¾ cup Frank’s Red Hot sauce
  • ½ cup water
  • ½ tbsp lemon juice
  • 2 tbsp nutritional yeast
  • ½ tsp onion powder
  • ½ tsp garlic powder

Instructions

  1. Soak the cashews in warm water for at least 30 minutes.
  2. Preheat the oven to 375°F and spray an 8x8 inch baking dish with cooking spray.
  3. In a food processor, blend the steamed cauliflower, soaked cashews, drained chickpeas, hot sauce, water, lemon juice, nutritional yeast, onion powder, and garlic powder until smooth.
  4. Transfer the mixture to the baking dish, cover with foil, and bake for 20 minutes.
  5. Remove the foil, turn the oven to broil, and cook for an additional 5 minutes.
  6. Serve warm with chips or veggies for dipping.
