Ingredients

The chili base

  • 1-2 Tbsp olive or avocado oil
  • 1 large onion, diced
  • 2 medium carrots, diced
  • 1 medium bell pepper, diced
  • 1 lb ground turkey
  • 4-5 large cloves garlic, minced
  • 2 medium jalapeño peppers, minced
  • 3 Tbsp tomato paste
  • 3 Tbsp chili powder
  • 2 Tbsp ground cumin
  • 1 Tbsp dried oregano
  • 1 Tbsp smoked paprika
  • ¾ tsp chipotle chili powder
  • 1-1½ tsp sea salt
  • ¼ tsp ground black pepper

The beans and vegetables

  • 2 (14.5 oz.) cans diced fire roasted tomatoes with green chiles
  • 3 (15 oz.) cans beans of choice, drained
  • 1 (15 oz.) can pumpkin purée
  • 1-2 cups water
  • 4 cups chopped kale

For serving

  • optional Avocado
  • optional Freshly chopped cilantro
  • optional Lime wedges

Instructions

  1. Heat oil in a large pot over medium heat and sauté onions and carrots until tender.
  2. Add bell pepper and sauté for another minute or two.
  3. Add ground turkey and cook until no longer pink.
  4. Mix spices in a bowl and add garlic, jalapeño, tomato paste, and spices to the turkey.
  5. Add diced tomatoes, drained beans, pumpkin purée, water, and chopped kale.
  6. Bring to a simmer, then reduce heat and cook uncovered for 20-30 minutes until thickened.
  7. Serve warm with optional garnishes.
