Instructions
- Heat oil in a large pot over medium heat and sauté onions and carrots until tender.
- Add bell pepper and sauté for another minute or two.
- Add ground turkey and cook until no longer pink.
- Mix spices in a bowl and add garlic, jalapeño, tomato paste, and spices to the turkey.
- Add diced tomatoes, drained beans, pumpkin purée, water, and chopped kale.
- Bring to a simmer, then reduce heat and cook uncovered for 20-30 minutes until thickened.
- Serve warm with optional garnishes.
