Instructions
- Preheat the oven to 375°F (190°C) and grease a muffin tin.
- Mix flaxseed meal and water in a bowl to create flax eggs and let sit for 5 minutes.
- Mash the bananas into the flax egg mixture.
- Add brown sugar, baking soda, and salt, and whisk for one minute.
- Stir in vanilla and melted vegan butter.
- Add flour and oats, mixing until just combined. If using, fold in walnuts.
- Divide the batter among the muffin tins, filling them about ¾ full.
- In another bowl, mix crumble ingredients until crumbly.
- Top the muffins generously with the crumble mixture.
- Bake for 17-22 minutes until golden brown and a toothpick comes out clean.
- Let cool for a few minutes before removing from the tin.
