Ingredients

The muffins

  • cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 3 pieces bananas, mashed
  • ¾ cup white sugar
  • 1 piece egg, lightly beaten
  • cup unsalted butter, melted

The crumb topping

  • cup brown sugar, packed
  • 2 tablespoons all-purpose flour
  • teaspoon ground cinnamon
  • 1 tablespoon unsalted butter

Instructions

  1. Preheat the oven to 375°F (190°C) and grease or line 10 muffin cups.
  2. In a large bowl, mix flour, baking soda, baking powder, and salt.
  3. In another bowl, combine mashed bananas, sugar, egg, and melted butter.
  4. Stir the banana mixture into the flour mixture until just moistened.
  5. Spoon the batter into the prepared muffin cups.
  6. In a small bowl, mix brown sugar, flour, and cinnamon, then cut in butter until crumbly.
  7. Sprinkle the crumb topping over the muffins.
  8. Bake for 18 to 20 minutes until a toothpick comes out clean.
  9. Let cool for 10 minutes before serving.
