Instructions
- Preheat the oven to 375°F and prepare muffin cups.
- For the topping, mix brown sugar, flour, and cinnamon in a bowl, then crumble in the butter until it resembles wet sand.
- For the muffins, mash bananas to measure 1½ cups and set aside.
- Melt butter in a mixing bowl, then add sugar and egg, mixing well.
- Incorporate the mashed bananas into the mixture.
- Add flour to the bowl, then sprinkle baking powder, baking soda, and salt on top without mixing yet.
- Mix everything together until just combined, being careful not to overmix.
- Fill muffin cups about ⅔ to ¾ full and sprinkle the topping over each muffin.
- Bake for 15-20 minutes until a toothpick comes out with a few moist crumbs.
