The muffins

  • 1 teaspoon baking soda
  • ½ teaspoon salt

Instructions

  1. Preheat the oven to 375°F and prepare muffin cups.
  2. For the topping, mix brown sugar, flour, and cinnamon in a bowl, then crumble in the butter until it resembles wet sand.
  3. For the muffins, mash bananas to measure 1½ cups and set aside.
  4. Melt butter in a mixing bowl, then add sugar and egg, mixing well.
  5. Incorporate the mashed bananas into the mixture.
  6. Add flour to the bowl, then sprinkle baking powder, baking soda, and salt on top without mixing yet.
  7. Mix everything together until just combined, being careful not to overmix.
  8. Fill muffin cups about ⅔ to ¾ full and sprinkle the topping over each muffin.
  9. Bake for 15-20 minutes until a toothpick comes out with a few moist crumbs.
