Vegan Banana Muffins

Instructions
- Preheat the oven to 350°F and prepare a muffin tin.
- Make a flax egg by mixing ground flaxseed with warm water and letting it rest for 5 minutes.
- Mash the ripe bananas in a bowl until mostly smooth.
- In a large bowl, combine all the dry ingredients and mix well.
- Add the wet ingredients to the dry ingredients and stir until just combined.
- Adjust the batter consistency by adding flour or soy milk if necessary.
- Distribute about ⅓ cup of batter into each muffin cup.
- Bake for 18-20 minutes until a toothpick comes out clean.
- Let muffins cool in the tin for 5 minutes before transferring to a wire rack.
