Ingredients

  • 1 cup mashed ripe banana
  • 1 tablespoon ground flaxseed
  • 3 tablespoons water
  • 2 cups all-purpose flour
  • ½ cup organic white sugar
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ¾ cup soy milk
  • cup melted vegan butter
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F and prepare a muffin tin.
  2. Make a flax egg by mixing ground flaxseed with warm water and letting it rest for 5 minutes.
  3. Mash the ripe bananas in a bowl until mostly smooth.
  4. In a large bowl, combine all the dry ingredients and mix well.
  5. Add the wet ingredients to the dry ingredients and stir until just combined.
  6. Adjust the batter consistency by adding flour or soy milk if necessary.
  7. Distribute about ⅓ cup of batter into each muffin cup.
  8. Bake for 18-20 minutes until a toothpick comes out clean.
  9. Let muffins cool in the tin for 5 minutes before transferring to a wire rack.
