Ingredients

  • ½ cup whole-wheat pastry flour
  • ½ tsp baking soda
  • 1 pinch salt
  • 1 very ripe banana
  • 3 Tbsp brown sugar
  • 1 Tbsp vegan butter (melted)
  • 1 small flax egg (1/2 Tbsp flaxseed meal + 2 Tbsp water)
  • ½ tsp vanilla extract
  • 4 Tbsp whole walnuts (for topping)

Instructions

  1. 1. Preheat the oven to 375°F and lightly butter two small ramekins.
  2. 2. Prepare the flax egg and set it aside.
  3. 3. In a large bowl, mash the banana, leaving some texture.
  4. 4. Add brown sugar, baking soda, and salt, then whisk for one minute.
  5. 5. Stir in the flax egg, vanilla, and melted butter.
  6. 6. Add the flour and stir until just combined.
  7. 7. Divide the batter evenly into the ramekins, filling them about ½ to ¾ full, and top with walnuts.
  8. 8. Bake for 25-30 minutes until the tops are golden and a toothpick comes out clean.
  9. 9. Let cool for a few minutes, then remove from ramekins and serve warm.
