Vegan Banana Nut Muffins

Instructions
- 1. Preheat the oven to 375°F and lightly butter two small ramekins.
- 2. Prepare the flax egg and set it aside.
- 3. In a large bowl, mash the banana, leaving some texture.
- 4. Add brown sugar, baking soda, and salt, then whisk for one minute.
- 5. Stir in the flax egg, vanilla, and melted butter.
- 6. Add the flour and stir until just combined.
- 7. Divide the batter evenly into the ramekins, filling them about ½ to ¾ full, and top with walnuts.
- 8. Bake for 25-30 minutes until the tops are golden and a toothpick comes out clean.
- 9. Let cool for a few minutes, then remove from ramekins and serve warm.
