Vegan Chocolate Chip Walnut Cookies

Ingredients

  • ½ cup aquafaba
  • cup packed brown sugar
  • cup organic white sugar
  • 2 teaspoons vanilla
  • ¾ cup vegan butter sticks
  • 1 cup white whole wheat flour
  • 1 ¾ cups all purpose flour
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt (optional)
  • 1 ½ cups vegan chocolate chips
  • ½ cup coarsely chopped walnuts

Instructions

  1. Whip aquafaba with brown and white sugar until peaks form.
  2. Preheat the oven to 375°F.
  3. Blend in vanilla and vegan butter until combined.
  4. Mix in white whole wheat flour, all purpose flour, baking powder, and salt until just combined.
  5. Fold in chocolate chips and walnuts.
  6. Scoop about 2 tablespoons of dough onto a baking sheet and flatten slightly.
  7. Bake for 10-14 minutes until lightly golden.
  8. Cool and store in an airtight container if not serving immediately.
