Small-batch Strawberry Frosting

Ingredients

  • 4 medium strawberries, hulled
  • 1 teaspoon granulated sugar
  • 4 tablespoons unsalted butter, softened
  • 1 cup powdered sugar, sifted
  • ¼ teaspoon vanilla extract
  • a pinch salt

Instructions

  1. Puree the strawberries in a blender or food processor.
  2. Measure out ¼ cup of pureed strawberries and add to a small pot.
  3. Add granulated sugar to the pot and bring to a simmer, cooking until reduced to 1½ to 2 tablespoons.
  4. Remove from heat and cool the mixture until completely cool to the touch.
  5. In a medium bowl, beat the softened butter until light and fluffy.
  6. Add powdered sugar, 1 teaspoon of cooled puree, vanilla extract, and salt, and beat for 30 seconds.
  7. Add 2 more teaspoons of the puree one at a time, beating well after each addition.
  8. Continue to beat until the frosting is light and fluffy.
  9. Use the frosting over cookies, cupcakes, or brownies.
