Instructions
- Puree strawberries and measure out 1/4 cup for the frosting.
- Simmer the strawberry puree with sugar until reduced, then cool.
- Preheat the oven to 350°F and prepare a baking sheet.
- Whisk together flour, baking powder, and salt in a bowl.
- Cream butter and sugar until fluffy, then mix in egg white and vanilla.
- Add lemon zest and mix well, then incorporate the flour mixture.
- Form dough into balls, coat in powdered sugar, and flatten on the baking sheet.
- Bake for 9 to 12 minutes until set and slightly golden.
- Cool cookies before frosting.
- Beat butter for frosting, then mix in powdered sugar and cooled strawberry puree.
- Frost the cooled cookies and serve.
