Ingredients

Homemade Strawberry Frosting

  • 4 medium strawberries, hulled
  • 1 teaspoon granulated sugar
  • 4 tablespoons unsalted butter, softened
  • 1 cup powdered sugar, sifted
  • ¼ teaspoon vanilla extract
  • a pinch salt

Lemon Sugar Cookies

  • ¾ cup + 2 tablespoons all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • cup unsalted butter, softened
  • ¼ cup + 2 tablespoons granulated sugar
  • 1 large egg white
  • ½ teaspoon vanilla extract
  • 1 teaspoon lemon zest
  • cup powdered sugar

Instructions

  1. Puree strawberries and measure out 1/4 cup for the frosting.
  2. Simmer the strawberry puree with sugar until reduced, then cool.
  3. Preheat the oven to 350°F and prepare a baking sheet.
  4. Whisk together flour, baking powder, and salt in a bowl.
  5. Cream butter and sugar until fluffy, then mix in egg white and vanilla.
  6. Add lemon zest and mix well, then incorporate the flour mixture.
  7. Form dough into balls, coat in powdered sugar, and flatten on the baking sheet.
  8. Bake for 9 to 12 minutes until set and slightly golden.
  9. Cool cookies before frosting.
  10. Beat butter for frosting, then mix in powdered sugar and cooled strawberry puree.
  11. Frost the cooled cookies and serve.
