Instructions
- Preheat the oven to 350°F and optionally line a baking sheet with parchment paper.
- Pulverize 1 ounce of freeze-dried strawberries in a blender or food processor until mostly powdery.
- In a mixing bowl, cream together the softened butter and sugars until light and fluffy.
- Stir in the egg and vanilla, then mix in the strawberry powder until the dough is pink.
- Whisk together the flour, baking soda, and salt in a separate bowl, then mix into the wet ingredients gradually.
- Scoop about 2 tablespoons of dough per cookie, roll into balls, and optionally coat in sugar.
- Place the dough balls on a baking sheet, leaving space between them.
- Bake for 8 to 10 minutes until the edges are golden, then let cool on a rack.
