Ingredients

The cookies

  • ¾ cup chopped strawberries
  • 2 cups all-purpose flour
  • ½ cup granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, cold and cubed
  • cup milk, cold
  • 1 large egg, cold
  • 1 teaspoon pure vanilla extract
  • optional coarse sugar for topping

The icing

  • 1 cup confectioners’ sugar
  • 2–3 Tablespoons milk or heavy cream
  • ¼ teaspoon pure vanilla extract
  • optional heaping Tablespoon strawberry jam

Instructions

  1. Chop and blot the strawberries, then freeze them.
  2. Mix the dry ingredients in a bowl.
  3. Cut in the cold butter until coarse crumbs form.
  4. Whisk together the milk, egg, and vanilla; add to the dry mix.
  5. Gently mix to form a thick dough, then fold in the strawberries.
  6. Chill the dough for at least 45 minutes.
  7. Preheat the oven and prepare baking sheets.
  8. Shape the dough into balls and place on sheets, topping with coarse sugar if desired.
  9. Bake until the edges are lightly browned.
  10. Cool on the baking sheet before icing.
