Strawberry and Cream Cookies

Ingredients

  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • teaspoons baking soda
  • 1 teaspoon kosher salt
  • 1 cup unsalted butter
  • cups brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • ½ cup freeze-dried strawberries, crushed or finely chopped
  • 8 ounces white chocolate chips

Instructions

  1. Whisk together the flour, baking powder, baking soda, and salt in a large bowl.
  2. Melt the butter in a saucepan over low heat, then remove from heat and whisk in the sugars.
  3. Add the eggs and vanilla to the butter mixture and let it cool for 5 minutes.
  4. Combine the wet ingredients with the dry ingredients until mixed.
  5. Fold in the freeze-dried strawberries and white chocolate chips.
  6. Cover the dough and chill in the refrigerator for 1 hour.
  7. Preheat the oven to 350°F.
  8. Scoop out 1½-inch balls of dough, roll them, and place them on a parchment-lined baking sheet with space in between.
  9. Bake for 8 to 10 minutes until lightly golden brown.
  10. Enjoy warm with milk.
