Ingredients

The filling

  • 6 cups blueberries
  • ΒΌ cup allulose
  • 1 tablespoon cinnamon
  • 1 teaspoon xanthan gum
  • 2 teaspoons lemon juice

The biscuit topping

  • 1 cup almond flour
  • 1 teaspoon baking powder
  • 2 tablespoons sugar free brown sugar
  • 2 tablespoons allulose
  • 1 large egg
  • 3 tablespoons butter
  • 2 tablespoons heavy cream

Instructions

  1. Preheat the oven to 180C/350F and grease a baking dish.
  2. Combine the filling ingredients in a large bowl and bake for 10-15 minutes.
  3. In a separate bowl, whisk together the dry ingredients for the biscuit topping, then add the egg, melted butter, and heavy cream, mixing until combined.
  4. Remove the baking dish from the oven and spoon the biscuit topping over the blueberries.
  5. Bake again for 15-20 minutes or until the topping is golden brown.
  6. Let it cool for 5 minutes before serving.
