Ingredients

Blueberry Base

  • 4 cups fresh blueberries (or frozen)
  • 2 tbsp maple syrup
  • 1 tbsp lemon juice
  • 1 tsp vanilla
  • 1 tbsp arrowroot powder (or cornstarch)

Cobbler

  • 1 cup rolled oats
  • 1 cup finely chopped walnuts (or other nut)
  • 1 cup almond flour
  • ¼ tsp salt
  • ½ cup maple syrup
  • cup coconut oil, melted
  • 1 tsp vanilla

Instructions

  1. 1. Preheat the oven to 350°F.
  2. 2. In a large bowl, mix the blueberries, maple syrup, lemon juice, and vanilla. Add the arrowroot starch and toss the blueberries.
  3. 3. Spoon the berries into an 8x8 inch pan, leaving the juice behind in the mixing bowl.
  4. 4. In another bowl, mix the oats, walnuts, almond flour, and salt.
  5. 5. Stir in the maple syrup, coconut oil, and vanilla until well combined.
  6. 6. Spread the cobbler topping over the blueberries until most of the berries are covered.
  7. 7. Bake in the oven for 40-45 minutes or until the topping is golden brown.
  8. 8. Let cool for 15 minutes before serving. Store leftovers in the refrigerator.
