Ingredients

Filling

  • 4 cups Blueberries
  • 2 tbsp Besti Monk Fruit Allulose Blend
  • 1 tsp Lemon zest

Topping

  • 1 cup Wholesome Yum Blanched Almond Flour
  • ¼ cup Besti Monk Fruit Allulose Blend
  • 1 tsp Baking powder
  • ¼ tsp Sea salt
  • ¼ cup Unsalted butter (cold)
  • 1 large Egg
  • 2 tbsp Heavy cream
  • 1 tsp Vanilla extract

Instructions

  1. Preheat the oven to 350 degrees F (176 degrees C) and grease an 8×8 baking dish.
  2. In a large bowl, mix the blueberries, Besti, and lemon zest, then arrange in the bottom of the baking dish.
  3. In a food processor, combine almond flour, Besti, baking powder, and sea salt until uniform.
  4. Add the cold butter and pulse until crumbly.
  5. Add the egg, cream, and vanilla, then pulse until combined.
  6. Drop dollops of the topping over the blueberries, covering most but leaving some spots uncovered.
  7. Bake for 20-25 minutes until the filling is bubbly and the top is golden brown.
