Ingredients

Blackberry Cobbler Filling

  • 1 lb Blackberries
  • 2 tbsp Lemon juice
  • cup Besti Monk Fruit Allulose Blend
  • 2 tbsp Unflavored gelatin powder

Cobbler Topping

  • 1 cup Wholesome Yum Blanched Almond Flour
  • ¼ cup Besti Monk Fruit Allulose Blend
  • ½ tsp Baking powder
  • ¼ tsp Sea salt
  • ¼ cup Coconut oil
  • ½ tsp Vanilla extract

Instructions

  1. Preheat the oven to 350°F.
  2. In a large bowl, combine the blackberries, lemon juice, and sweetener. Sprinkle gelatin over the mixture and mix well.
  3. Transfer the berry mixture to the bottom of an 8x8 inch baking pan.
  4. Melt the coconut oil in a separate bowl, then stir in the vanilla extract.
  5. Add almond flour, sweetener, baking powder, and sea salt to the melted oil. Mix until crumbly.
  6. Crumble the topping over the berries, leaving some berries exposed.
  7. Bake for 25-30 minutes until the top is golden. Let it rest for at least 10 minutes before serving.
