Ingredients

Filling

  • 6 cups blackberries
  • 2 teaspoons lemon juice
  • ¼ cup granulated sweetener of choice
  • 1 tablespoon cinnamon
  • 1 teaspoon xanthan gum

Cobbler Topping

  • ½ cup almonds, chopped
  • 1 cup almond flour
  • ½ cup unsweetened shredded coconut
  • ¼ cup granulated sweetener of choice
  • ½ cup coconut oil, melted

Instructions

  1. Preheat the oven to 180C/350F and lightly grease a baking dish.
  2. Mix the filling ingredients in a bowl and pour into the baking dish.
  3. Bake the filling for 10 minutes.
  4. In a separate bowl, mix the cobbler topping ingredients until combined.
  5. Remove the filling from the oven and sprinkle the topping over it.
  6. Return to the oven and bake for an additional 10-15 minutes until golden brown.
  7. Serve immediately.
