Ingredients

The vegetables

  • 1 cup zucchini, cut into half-moons

The sauce and cheese

  • 1 cup marinara sauce (no added sugar)
  • 2 ounces parmesan, shredded

Optional toppings

  • any amount any other pizza toppings you love

Instructions

  1. Preheat the oven to 350ºF.
  2. Slice the zucchini into ½-inch thick coins and then cut them in half to make half-moon shapes.
  3. Transfer the zucchini to a baking sheet and pour marinara sauce over the top, ensuring all pieces are coated.
  4. Spread the coated vegetables in a single layer on the baking sheet.
  5. Bake in the oven for 20 minutes.
  6. Flip the zucchini and continue cooking for an additional 5 to 10 minutes until tender.
  7. Remove from the oven and serve warm, topped with cheese and any additional toppings.
