Ingredients

Dressing

  • 1 tablespoon red wine vinegar
  • 1 tablespoon marinade from a jar of marinated artichokes (optional)
  • 1 teaspoon Dijon mustard
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano leaves
  • to taste coarse salt and ground black pepper

Salad

  • 1 15-ounce can chickpeas, rinsed and drained
  • 2 2.6-ounce pouches albacore white tuna
  • ½ pint cherry tomatoes, halved
  • ½ English cucumber, diced
  • 1 cup pitted Greek olives
  • 1 cup marinated artichoke hearts, drained (optional)

Instructions

  1. Whisk together the dressing ingredients in a medium mixing bowl and season with salt and black pepper.
  2. Add the chickpeas, tuna, tomatoes, cucumber, olives, and artichokes to the bowl.
  3. Stir to combine and taste to adjust seasoning if necessary.
