Instructions
- Prepare the dressing by whisking together olive oil, lemon juice, minced garlic, salt, and black pepper in a large bowl.
- Chop the veggies: dice the red onion, cucumber, red bell pepper, and cherry tomatoes, and mince the dill and parsley, adding them to the bowl as you go.
- Add the rinsed and drained chickpeas to the bowl and toss everything well to coat in the dressing.
- Let the salad marinate for at least 15 minutes to enhance the flavors. If using, stir in the crumbled feta before serving.
- Taste and adjust seasoning if necessary, then serve at room temperature or chilled.
