Ingredients

  • 1 tablespoon extra virgin olive oil
  • 3 tablespoons lemon juice
  • 1 clove garlic, minced
  • 1 teaspoon fine sea salt
  • ½ teaspoon black pepper
  • ½ red onion diced
  • 1 red bell pepper diced
  • 1 large cucumber, diced
  • 1 cup cherry tomatoes, halved
  • ¼ cup fresh dill, minced
  • ¼ cup flat-leaf Italian parsley, minced
  • 2 15-ounce cans chickpeas, rinsed and drained
  • 3 ounces crumbled feta (optional)

Instructions

  1. Prepare the dressing by whisking together olive oil, lemon juice, minced garlic, salt, and black pepper in a large bowl.
  2. Chop the veggies: dice the red onion, cucumber, red bell pepper, and cherry tomatoes, and mince the dill and parsley, adding them to the bowl as you go.
  3. Add the rinsed and drained chickpeas to the bowl and toss everything well to coat in the dressing.
  4. Let the salad marinate for at least 15 minutes to enhance the flavors. If using, stir in the crumbled feta before serving.
  5. Taste and adjust seasoning if necessary, then serve at room temperature or chilled.
